Chocolate Oatmeal Cookies

Chocolate Oatmeal CookiesErin Rieger

1 cup sugar
2/3 cup shortening
6 tbsp cocoa
1 egg
2 tbsp water
1 1/2 tsp vanilla

1 cup flour
1/2 tsp baking soda
1/2 tsp salt
1 cup rolled oats
1/2 cup chopped pecans (optional)

Blend 1 cup sugar and shortening with mixer until fluffy. Add cocoa, egg, water, and vanilla. Beat well. In a separate bowl, stir the flour, baking soda, and salt With the mixer on low speed, gradually add the flour mixture to the flour mixture, beating until well mixed. With a wooden spoon, stir in the oats and pecans. Form small balls about 1 inch in diameter and roll in a small bowl of sugar. Place balls about two inches apart on ungreased cookie sheets. Flatten the balls in a criss-cross with the tines of a fork. Bake at 375 degrees for 10 to 12 minutes or until edges of cookies are firm.

Yields approximately 48 cookies.
