Peanut Butter Cookies

Peanut Butter CookiesErin Rieger

1/2 cup margarine
1/2 cup peanut butter
1/2 cup sugar
1/2 cup brown sugar
1 egg
1/2 tsp vanilla
1 1/4 cups flour
3/4 tsp baking soda
1/4 tsp salt

Cream margarine, peanut butter, sugar, brown sugar, egg and vanilla. Sift together dry ingredients and blend into creamed mixture. Roll dough into balls 1-inch in diameter and roll ball in small bowl of sugar. Separate 2 inches apart on an ungreased cookie sheet and press balls down slightly in a criss-cross with tines of fork. Bake at 375 degrees for 10 to 12 minutes.

Yields approximately 4 dozen cookies.
