Pizza de Padre

Dough:
One envelope yeast (1 tbsp)
1 tsp sugar
3/4 cup water, lukewarm
Approx. 2 1/4 cup flour
1 tsp salt
1/4 cup oil
2 tsp oregano

Sauce:
1 (5.5 oz) can tomato paste
3 oz water
1 clove garlic, minced
1/4 tsp Tabasco hot sauce
1/2 tsp sugar
1/2 tsp salt
1 tsp oregano
1/4 tsp basil
1/4 tsp thyme
1/4 tsp celery salt
Pinch of ground cloves

Dissolve yeast and sugar in water and let stand for 10 minutes. Mix flour (2 cups), oregano, oil, and salt and then add yeast mixture. Knead dough until smooth and elastic using remaining flour to dust table. Let rise in greased bowl until doubled, place bowl in warm room for approximately 1 hour. Punch down and roll out on greased baking sheet, 12×17-inch. When ready to construct pizza, pour sauce on dough. Sprinkle sauce with grated Parmesan cheese and then cover with 1 cup shredded mozzarella or 8 oz sliced. Add meat toppings next, followed by vegetable toppings, adding mushrooms last. Bake at 400 degrees for approximately 20 to 25 minutes.
