Roasted Red Pepper Hummus

Roasted Red Pepper HummusChristopher Rieger

1 (15 oz) can garbanzo beans, drained and rinsed
1/3 cup tahini
1/4 cup lemon juice
2 cloves garlic, minced
1 tbsp extra-virgin olive oil
1 tsp salt
1/4 tsp paprika
1/4 tsp ground cayenne pepper
1/4 tsp ground white pepper
1/4 tsp ground cumin
1/2 cup roasted red pepper, chopped

Mix all ingredients in a food processor and blend on high until smooth. Refrigerate and serve chilled.

Note: This recipe is still pretty good even without the red peppers.

Roasting Red Peppers:

Core and rinse a red bell pepper. Slice into long strips and rub with a small amount of extra-virgin olive oil. Place into a 450 degree oven for about 10-15 minutes or until the strips have softened and the edges are becoming just a bit blackened. Strips not needed may be stored in olive oil and refrigerated.
