Basic Waffles

2 eggs
2 cups all-purpose flour
1 3/4 cups milk
1/2 cup melted butter (1 stick)
1 tbsp white sugar
4 tsp baking powder
1 tsp kosher salt
1 tsp vanilla extract

Preheat waffle iron. Beat eggs in a large bowl until fluffy. Mix in flour, milk, butter, sugar, baking powder, salt, and vanilla and blend until just until smooth.

Spray preheated waffle iron with non-stick cooking spray. Pour mix onto hot waffle iron and cook until golden brown. Serve hot. Add your choice of toppings including fruit, butter, syrup, and whipped cream.

Makes approximately 11-12 waffles.

Note: Any leftover waffles will freeze very well. Reheat frozen waffles by placing them into the toaster for one or two cycles until hot and crisp.
