Blue Dog Bakery’s Sausage and Lentil Stew

Blue Dog Bakery’s Sausage and Lentil StewCourier-Journal

2 tablespoons butter
1/4 pound country ham, diced
1 1/2 cups lentils
1 cup half-and-half
1 quart water
Salt and pepper to taste

1 tablespoon oil
1/2 pound sausage of choice, sliced
1/4 cup chopped parsley

In a 3-quart pot, melt the butter, and when sizzling, add the ham and sauté until just beginning to brown, 5 minutes or so. Add the lentils, half-and-half and water. Bring to a boil, reduce heat to simmer and cook 40 to 60 minutes, until lentils are tender. Puree the mixture, taste and adjust seasoning with salt and pepper.

In a skillet or sauté pan, heat the oil until shimmery, then add the sausage slices and brown nicely on all sides. Serve the lentils in a bowl, garnished with cooked sausage slices and chopped parsley.

Serves 6.
