Peanut Brittle

Peanut Brittle – Helen Rieger

1 cup sugar
1/2 cup white corn syrup
1 1/2 cups dry roasted peanuts
1 tsp vanilla
1 tbsp margarine
1 tsp baking soda

Mix sugar and corn syrup in microwave-safe bowl and heat on high for 4 minutes. Remove from microwave and stir in peanuts. Cook mixture again for another 4 minutes on high. Remove from microwave and QUICKLY stir in vanilla, margarine, and baking soda. Immediately spread foamy mixture on a greased cooking sheet to desired thickness. Let cool for approximately 20 minutes and break into pieces.
