Broccoli Cheddar Soup

Broccoli Cheddar Soup – Inspired from Allrecipes

1/4 cup butter
1 onion, finely diced
2 carrots, finely diced
2 stalks celery, finely diced
2 cloves garlic, minced
1 (16 ounce) package frozen chopped broccoli
6 cups chicken broth
1 pound sharp cheddar cheese, grated
2 cups milk
1/2 cup flour
1/2 teaspoon freshly ground black pepper

1. In a stockpot, melt butter over medium heat. Saute onion, celery, carrot, and garlic in butter until softened. Stir in broccoli, and cover with chicken broth. Simmer until broccoli is tender, 10 to 15 minutes.
2. In a separate pan, gently warm the milk over medium heat. Toss the flour with the grated cheese and stir into the milk until the mixture is smooth.
3. Stir the cheese sauce into the larger pot and stir to combine. Allow to simmer for 5 minutes to blend flavors. Add pepper and serve. If desired, blend a portion of the soup with a stick blender to make it smoother..
