Black Bean Burritos

Black Bean Burritos – inspired by Allrecipes

2 tablespoons olive oil
1 small yellow onion, chopped
1/2 green bell pepper, chopped
2 cloves garlic, minded
1 cup corn kernels
1 (15 ounce) can black beans, rinsed and drained
1/2 teaspoon chile powder
2 tablespoons chopped fresh cilantro
Flour tortillas, burrito or soft taco size
Sour cream
Shredded Cheddar or Colby/Monterey blend cheese
Salsa (preferably tomato-based)

1. Wrap tortillas in foil and place in oven heated to 350 degrees F (175 degrees C). Bake for 15 minutes or until heated through.
2. Heat oil in a 10-inch skillet over medium heat. Place onion, bell pepper, garlic, and chile powder in skillet, cook for 5 minutes stirring occasionally until onion is translucent. Pour beans, corn, and cilantro into skillet, cook 3 minutes stirring.
3. Spoon mixture evenly down center of warmed tortilla. Dress with sour cream, shredded cheese, and salsa to your taste. Roll tortillas up and serve immediately.

Note: I use my own chile powder blend, but any one you like is fine. Swap out the green bell pepperfor red if desired or throw in some spice by adding othe peppers like jalapeno.
