Christopher’s German Potato Salad

Christopher’s German Potato Salad – inspired from Allrecipes and my Grandfather

2 pounds red potatoes
1 medium yellow onion, diced
1/2 pound bacon, chopped
1/3 cup cider vinegar
1/3 cup white sugar
1/3 cup water
1 tablespoon Dijon mustard
1 teaspoon celery seeds
1 tablespoon parsley leaves, chopped
1 teaspoon kosher salt
1/2 teaspoon freshly ground pepper

Bring a large pot of water to a boil. Add potatoes and cook until tender but still firm, about 15 minutes. Drain, cool and slice thin. Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside, reserving drippings. Sauté onions in bacon drippings until they are golden-brown. In a small bowl, whisk together the vinegar, sugar, water, mustard, celery seed, salt, and pepper. Add to the sauteed onions and cook and stir until bubbly, then remove from heat. Bring to a boil, stirring constantly. Carefully stir bacon and sliced potatoes into the dressing mixture, stirring gently until potatoes are heated through.
