Blue Cheese Cole Slaw

Blue Cheese Cole Slaw

1 small head red cabbage
3 large carrots, shredded
1/2 cup onion, shaved
1 cup mayonnaise
1/4 cup Dijon mustard
2 tablespoons apple cider vinegar
2 tablespoons white sugar
1 teaspoon celery seeds
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
6 ounces crumbled blue cheese

Thinly slice the cabbage and chop into small pieces. Add the shredded carrots and shaved onion to large bowl. Toss the mixutre until blended. In a separate bowl, whish together the mayonnaise, mustard, vinegar, celery seeds, salt, black pepper, and blue cheese. Pour the dresing over the cabbage and stril until evenly coated. Cover the bowl with plastic wrap and refrigerate for several hours to allow the flavors to blend. Serve cold or at room temperature.
